Pear, Parma Ham and Brie Flatbread

Hello again! Today I made this rather lovely autumnal flatbread and I wanted to share the recipe with you so here goes…



Pears are finally back in season (in England) and I am very excited about it! Also in season again are the bitterly cold winds that make me want to stay inside and eat something warm and delicious and preferably containing lots of melty gooey cheese. Thus my pear, brie and parma ham flatbread was born.

If you were not already sold by the mention of brie this dish is also SO easy to make and takes about fifteen minutes from start to finish. Basically you just mix together flour, salt and yogurt, knead it into a dough, fry it and then pile on the ingredients and voila! Breakfast/ brunch/ lunch is served.




Makes 2 flatbread 

10 minutes prep

5 minutes cooking


  • 100g self raising flour
  • 100g natural yogurt
  • 1 pinch of salt
  • 2 pears, sliced finely
  • 100 g brie, rind removed and brie diced
  • 60g parma ham, torn into bite sized pieces
  • 1 handful of basil leaves, finely sliced


  1. Mix together the flour, yogurt and salt until combined.
  2. On a table dusted with self raising flour knead the mixture until it has formed a smooth dough. It should still be a slightly wet dough but should not stick to the surface.
  3. Cut the dough in half and then roll out each section into a circle until it is roughly 3mm thick.
  4. Heat up a large frying pan on the highest setting until it is searing hot. One at a time cook each flatbread for 4 minutes, turning over every 30 seconds until it is cooked through and is bubbling on the surface.
  5. Before taking each flatbread off the pan, sprinkle over half of the brie onto each so that it melts into the dough a little.
  6. Remove from the pan and then divide the parma ham, pear slices and basil between the flatbreads.

    I wonder if I can make this with a gluten free flour blend. I’ll give it a try and get back with the results. I love the idea of the pears and ham with. Unfortunately, I can’t tolerate gluten. This would make such a lovely alternative for me on family pizza nights.
