Christmas baking season has commenced!
And even though I am very excited about this as I adore Christmas I must admit that I am not a natural baker – I tend to get a little restless and upset if the results are not as perfect as they look in the recipe. However these meringues are so easy and fun to create and make the perfect gift or festive snack.
As I always point out; you can play around with this recipe as much as you want. Add spices to the meringue mixture or dip them in white chocolate. The world is your oyster!
Makes: 30 – 35 meringues
Prep time: 10 minutes
Cooking time: 1 hour and 15 minutes
Decorating time: 15 – 20 minutes
Ingredients
- 4 medium eggs
- 100 g caster sugar
- 50 g icing sugar
- 100 g milk chocolate
- 100 g dark chocolate
- 75 g roasted chopped hazelnuts
- 75 g roasted chopped pistachios
- 75 g ground almonds
Method
- Preheat the oven to 110 degrees (fan). Line two baking trays with baking parchment and set to one side.
- Separate the egg whites from the yolks and put the yolks in the fridge to use another time. Whisk up the egg whites until firm peaks form. Stir the two sugars together and add to the egg whites a little at a time, whisking as you do until combined and soft peaks have formed and the mixture is glossy.
- Pour the meringue into a piping bag (if using a small bag do this in batches as otherwise the meringue may overflow). Snip the end off the bag to release any air and twist the top of the bag to close it.
- Hold the piping bag over the tray and exert pressure on the bag to create 2 cm circles of meringue then quickly draw the bag upwards to create the point. Repeat until all the meringue mixture has been used.
- Place these in the oven for 1 hour. Turn the oven off and then leave them in the oven for a further 15 minutes to allow them to cool.
- Melt both chocolates either in the microwave or using the bain marie technique, whichever you prefer. Pour the nuts onto separate plates. Hold onto the point of the meringue and dip the base first in melted chocolate and then in the nuts. Place back onto baking parchment until they have set and then enjoy!

These look a lot more complicated than they are. At first I thought there was a solid chocolate base (with nuts), and the meringue was on top of that. Your pictures and text show that there is just dipping involved. Very clever! Would it be possible to make a coffee-flavored meringue? That would be super with the dark chocolate and nuts.

You could totally make them coffee flavored. Add some espresso powder or some instant coffee granules… I’m not sure how much you would need, but it would be excellent!

I used to keep espresso powder around for just such occasions, but found that after about half a dozen jars, I tired of it, and the last jar got all caked up. King Arthur Flour had a nice rendition of this that I used. They formerly shipped it postage paid for a reasonable price, but probably postage would be required now. Should go look again.

Question: “caster” and “icing” sugars. . . I’m in the US, what’s our equivalent? We have Baker’s sugar, powdered sugar. . .

I love this idea! We have constant rain and humidity right now, not the best environment for meringues. I may have to wait until I get to Tucson to try these 🙂

They turned out great 😊 We Aussies tends to bake pavlovas and make trifles for Christmas as it’s hot over here. So lots of fruits and cream.

Did you really whisk the meringues by hand? I don’t have an electric whisk, so I’ve tried it once and it took me so long what I felt discouranged to try again.

I did yes and it took me about five minutes for this quantity. In small amounts maybe it will be more doable! 🙂
