I posted a photo of these halloumi fries on my Instagram several weeks ago with a promise to share the recipe on here ASAP and then completely forgot to do so… Therefore I offer my apologies for the delay but better late then never right?
The creation of this recipe stems from a common conundrum – minimal supplies in the fridge; such a conundrum is generally a great source of inspiration however as it forces me to really think outside the box when whipping together a meal. When faced with halloumi, eggs, tomatoes, coriander and natural yogurt I scoured my brain and somehow came up with the recipe that I share with you today – loaded halloumi fries. The “loaded” part of these fries really was just a result of the food that I had lying around (though the outcome was delicious) so feel free to substitute in ingredients that you have in your store cupboards. You could try avocado, sour cream and lime juice for example or simply a drizzle of pesto.
Serves 2 – 4
Prep time – 20 minutes
Cooking time – 10 minutes
Ingredients
- 250 g halloumi
- 1 egg, whisked
- 3 tbsp plain flour
- 100 g panko breadcrumbs
- vegetable oil
- 2 tbsp natural yogurt
- 1 lemon
- 1 small bunch coriander
- 10 cherry tomatoes, halved
- salt and pepper
Method
- Cut the halloumi into sticks that are roughly 10 mms thick.
- Place the flour, egg and breadcrumbs into separate bowls and season each generously with salt and pepper. In turn dip all of the halloumi sticks first in flour then egg and then panko breadcrumbs ensuring that each one is evenly coated.
- Pour 1 inch of oil into a medium sized frying pan and heat until the oil is bubbling slightly. Add no more than 5 halloumi sticks to the pan at a time and fry for a couple of minutes on either side until golden brown. Remove from the pan with a slotted spoon and leave on kitchen towel to absorb excess oil. Do this until all fries are cooked.
- Lay out on a platter and drizzle over the natural yogurt, tomatoes and coriander. Squeeze the lemon over the fries and finish with a final twist of salt and pepper.

Wow – this looks like a great take on poutine – a French-Canadian dish. Poutine is really heavy with gravy and cheese curds and often other things like ground beef, sliced hot dogs or even duck confit. Yours looks much fresher – the tomatoes and coriander and lemon adding flavour balance to the heaviness of the fries. Nice work!
