How does a 20 minute sticky beef stir fry sound?
Like the perfect easy midweek supper right?
Stir fries are the ultimate lazy girl dinner. Minimum time, effort and washing up with maximum flavour, enjoyment and impact. Today’s stir fry is no different – the beef only needs to sit in it’s marinade for a few minutes and then said marinade is turned into a glossy and thick sauce with the addition of cornflour. Serve the beef over steamed rice or noodles and top with fresh herbs and a sprinkling of sesame seeds to introduce that wonderful crunchy texture to the dish and voila. Dinner in under 20 minutes.
A note on the marinade: I am aware that the ingredients listed for it is a tad lengthy and that can come across as daunting and/ or expensive. However I would consider all of these ingredients as store cupboard essentials, particularly if you enjoy Asian cuisine, so it may be worth investing in sesame oil, miso paste etc as they will probably pop up in many a recipe! Plus combining together the sweet, sour, nutty and fragrant flavours creates this incredible depth to the dish and will fill your kitchen with unbelievably delicious aromas.
P.S. this dish can be easily adapted for vegetarians by substituting the steak for thinly sliced firm tofu.
Serves 2ย
Prep time: 15 minutesย
Cooking time: 5 minutesย
Ingredients
- 250 g minute/ frying steak
- 3 tbsp soy sauce
- 2 tbsp honey
- 3 tbsp sesame oil
- 2 tsp miso paste
- juice of 1 lime
- 1/2 tsp chili flakes
- 1 inch ginger, peeled and grated
- 2 cloves garlic, peeled and grated
- 1 handful mint, finely chopped
- 1 handful coriander, finely chopped
- 1 tbsp sesame seeds
- 2 tsp cornflour
Method
- Slice up the minute steak into 1/2 inch strips.
- In a bowl combine together the soy sauce, honey, 2 tbsp of sesame oil, lime juice, miso paste, ginger, garlic, chili flakes and 2 tbsp of cold water. Place the steak strips into the marinade and set to one side for 10 minutes.
- In a wok or frying pan heat up the remaining sesame oil on a high heat. Remove the steak from the marinade and place it into the frying pan. Fry for 1 – 2 minutes, turning the beef over so that both sides are seared. It is important not to overcook the steak as it will become chewy and lose flavour.
- Meanwhile stir together the cornflour with 2 tsp of cold water to create a paste and then mix into the marinade until combined. Pour this into a small saucepan and bring it to the boil whilst continuing to stir it – this will only take a few minutes and the cornflour will thicken up the marinade to create a glossy and sticky sauce.
- One the sauce has boiled take it off the heat and stir in the cooked steak. Serve this over rice or noodles and sprinkle over the fresh herbs and sesame seeds.
