Hi guys, how does comfort food sound today?
So there are days when I want to eat a beautiful fillet of salmon and a whole greenhouse of vegetables and there are days when I want to eat a pile of meat and carbs and cheese. Guess which day it is today…?
Most definitely the latter. I took one of my favourite childhood dishes and played around with the cooking process a little by baking all the ingredients together in the oven and the results pleased me so much that I wanted to share the recipe with all of you. Ordinarily I make meatballs by cooking meat and sauce separately on the hob; which means there are many chopping boards, mixing bowls and pans to clean up after eating. I am generally in a carb induced coma and therefore too lazy to do much after demolishing spaghetti and meatballs which has created a niche in my kitchen for a one pan meatball recipe! (Basically this is the lazy girl meatball dinner but it’s so freaking yummy so bear with me).
In terms of kitchenware all you need is a mixing bowl, an oven safe frying pan, a cheese grater and a teaspoon and the majority of the ingredients will probably already be in your cupboards. Have I convinced you to start cooking?
Serves 4
Prep time: 10 minutes
Cooking time: 35 minutes
Ingredients
- 1 tsp olive oil
- 400 g minced beef
- 1 clove of garlic, peeled and grated
- 1 slice of bread, grated
- 4 tsp oregano
- 4 tsp thyme
- 1 tsp chili flakes
- 1 tsp sugar
- salt and pepper
- 400 g plum tomatoes
- 150 g fresh mozzarella
Method
- Preheat your oven to 200 degrees Celsius.
- Use your hands to combine together the minced meat, breadcrumbs, garlic, half of the thyme and half of the oregano. Season the meat generously with salt and pepper. Shape the meat firmly into approximately 8 balls.
- Grease an oven safe dish with the olive oil, distribute the meatballs evenly and cook in the oven for 10 minutes until they have browned up.
- Meanwhile crush the plum tomatoes into your bowl and mix together with the remaining herbs, chili flakes and sugar. Season generously with salt and pepper again.
- Remove the meatballs from the oven and pour the sauce over them. Place back in the oven for 15 minutes so that the sauce can heat up and thicken. Remove from the oven, sprinkle over the mozzarella and then return to the oven for the final 10 minutes.
- Serve with your favourite pasta or a loaf of good quality crusty bread. If you have any fresh basil or parsley then garnish everything generously with it.

Fabulous Rosie! Sometimes the simplest dishes are the best. Did you know that music and food go together? In fact, many chefs have been musicians as well. In my opinion you are well on your way to becoming something in the culinary trades. Your love of cooking and your approach is fantastic. I used to desire to be in the culinary field and am mostly self-taught with little bits of help from Jamie Oliver in certain aspects. I’m sure you know if him.
I’m in the states though (I met Jamie years ago and kept in touch via email a bit for a little while just before he went big). He taught me how to cook from the heart and what a huge difference that made! I ended up cooking for a bunch of people sometimes, it was rewarding. I never went pro, but Jamie told me something I will never forget. He told me that being a good cook will always beat being a professional chef, maybe not in monetary ways, but in quality ways.
Like I said, I am in the Western US and I was hoping at one time to get into the culinary arts perhaps in catering or something with a bit less pressure than being a chef. However there was and is no opportunity to really get into the culinary arts here in the western US. However, I hope it is still true that it is plentiful in the UK. If so, I think you are going to get there Rosie!
Keep cooking and keep cooking from the heart! Sometimes what I would do is put on music that makes me happy while I cooked and it made all the difference. You really can taste it when you put love and care into cooking.

I do love to listen to music whilst cooking and it definitely adds to the experience. Yes I have heard of JO and i adore him and his cooking – how cool that you got to meet him! I guess the wonderful thing is even if a career doesn’t blossom the love of food and the ability to cook delicious meals remains!
